Producer Profile

Maison Billecart Salmon was founded in 1818 after the marriage of Francois Billecart and Elisabeth Salmon and today, the business is operated by members of the two families. Billecart Salmon champagne has a long, illustrious history. It was served during the famous World’s Fair in Paris in 1889 and after many years of evolving its techniques and creating exceptional cuvées, Billecart Salmon has become one of the most renowned champagne houses. Their reinvention of the Brut Rose Cuvée has become the iconic cuvée of the Maison.

Nowadays, the 7th generation Mathieu Roland-Billecart runs the house, alongside other members of the family.

Sustainability is a key concern of the maison. Their philosophy is simple: ‘Respect the terroir in order to produce great wines’. Maison Billecart Salmon has obtained the ISO 50001 certification by the APAVE, which demonstrates its commitment to reducing its carbon footprint.

Billecart Salmon champagne prices vary widely according to the different cuvées, usually from £45 to over £1000 for very special releases. This makes their champagne accessible to everyone.

Antonio Galloni 95

The NV Extra Brut Sous Bois (base 2018) is just as compelling as it was last year. Powerful and ample in the glass, with tons of structure, the 2018 dazzles with its mix of orchard fruit character and French oak inflections. Dried flowers, chamomile, mint and dried lemon peel all build through to the finish. This is a bit closed today, but that’s probably a good sign for the future. Dosage is 3.9 grams per liter. Vinous 92

(made from one-third each Chardonnay, Pinot Noir and Pinot Meunier; 6 g/l dosage; L359333 15056M): Bright yellow. Pungent orchard fruit and lemon curd scents are complemented by suggestions of vanilla, anise and smoky minerals. Toasty and silky in texture, offering juicy pear and tangerine flavors plus a deeper suggestion of candied fig on the back half. Closes sappy, focused and long, with repeating smokiness and strong mineral cut. [Josh Raynolds, 01/01/2014]

Wine Advocate 92

The latest release of Billecart’s NV Brut Sous Bois is excellent, unwinding in the glass with notes of lemon oil, crisp stone fruit, buttery pastry and freshly baked bread. Medium to full-bodied, fleshy and elegantly vinous, with chalky phenolic structure and an enlivening pillowy mousse, it’s impressively deep and concentrated, with fine tension and grip. Early renditions of this cuvee tended to be at their best on release, but this impressive effort appears to be built to age. [William Kelley, 02/09/2021]
