The 2021 Le C des Carmes Haut-Brion contains 20% whole bunch, 100% infusion keeping pips inside the berries (important as Guillaume Pouthier felt the pips were unripe) matured in 20% new oak and the rest aged in 30hL foudres. It has a tightly-wound bouquet at first, unfolding with brambly red berry fruit, just a hint of Indian ink and incense. The palate is medium-bodied with crunchy red fruit. It has a completely different texture to many other Bordeaux you will taste this vintage because of the whole bunch addition with a very saline finish. Plenty of freshness here, moderate depth with fine length. This is a very fine and quite cerebral C.
