Today a Champagne release definitely worth more than a second look…a brace of simply gorgeous wines from the mighty (fine) house of Billecart-Salmon. Perhaps more excitingly still, both are from the great and memorable 2012 vintage.

To add to the fun the pricing remains in the realms of good sense and we concentrate on 2 very strong suits of Billecart – their deluxe Blanc de Blancs and Rosé cuvées. What could be nicer this spring morning…

Cuvée Elisabeth Salmon Rosé is nothing short of exceptional in 2012. The inherent richness from a low- yielding vintage combined with what William Kelley has previously described as ‘elegant, seamless…pillowy’ style will seduce you completely – and perhaps this Champagne might be opened and used for that very purpose! Along with the trademark finesse comes a sapid ‘vinosity’ and underlying salinity that takes the wine far beyond the simple here and now – it is something quite special and cellar worthy.

Just under 10% of the wine from a single plot in Mareuil-sur-Ay is vinified as still Pinot Noir and combined with various great Grand and 1er Crus in the prime villages of Mareuil-sur-Ay, Ay and Ambonnay plus Chardonnay from similar prime spots Chouilly, Avize, Mesnil-sur-Oger and Cramant. With a low dosage of 3.8g/l 2012 Cuvée Elisabeth Salmon Rosé is a worthy tribute to the house’s co-founder and a wine of supreme class. One of the critics below rates it virtually perfection on the palate.

The other tightly-wound string to the Billecart bow is the blindingly good 2012 Cuvée Louis Salmon Blanc de Blancs. This release, for the first time ever, is available commercially in magnums – albeit in a very limited manner. Previously reserved only for family consumption, 2012 Cuvée Louis Salmon is not only a profound Champagne it is something of a collector’s item in this format – our preferred bottle size. But fear not, it is also available in the easy-to- consume-at-lunchtime format of normal bottles!

2012 Cuvée Louis Salmon is spectacular Champagne whose blend of 100% Grand Cru Chardonnay comes from Mesnil-sur-Oger, (60%) Cramant (23%) and the remainder from Chouilly and Oiry. This magnificent affair, of which 25% was vinified in oak and saw 12 years of further lees ageing, is likely to sweep you off your feet from the word go. But you will be rewarded further as it will become even more profound with a little patience. A dazzling, complex blend of citrus fruits, Cuvée Louis is rounded out with those amazing maturing Chardonnay notes of butter, pan dulce or shortbread – all held together with a laser-like definition.

Two phenomenal wines and only available at the very best addresses, these are Champagnes for the true cognoscenti. Their exclusivity perhaps renders them less visible than some, but lest you forget Billecart-Salmon were the recipient of ‘Champagne of the Millennium’ when 150 luxury cuvées were organised and tasted by the doyen of Champagne writing Richard Juhlin. These 2 greats are worth your money.

2012 Billecart-Salmon, Cuvée Louis Salmon Blanc de Blancs

‘The 2012 Brut Blancs de Blancs Louis Salmon is a gorgeous Champagne. Lemon confit, spice, baked apple tart, chamomile and dried flowers are all nicely amplified. The 2012 was done 75% in tank and 25% in oak, with most of the lots undergoing malolactic fermentation. There’s a feeling of reserve in the 2012 that is quite appealing. This edition is terrific, but it also needs time to be at its best. I would be in no rush to open this. Low yields and a year beset by frost, hail, heavy rain, mildew and sunburn at various times produced a rich Champagne. The blend of sites in Mesnil-sur-Oger, Chouilly, Cramant and Oiry works so well. Dosage is 3.9 grams per liter. Disgorged: first trimester 2023. From 2024-2027.’

‘The 2012 Brut Rosé Cuvée Elisabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023. From 2025- 2037.’
